The Mocha Bar: A Fusion of Specialty Coffee and Premium Filipino Chocolate

Coffee and chocolate have a lot in common. They both come from beans, carefully roasted to bring out their best flavors, and loved by many around the world. They also naturally go well together, which is why it’s such a common flavor combination for all kinds of treats.

As a specialty coffee roastery, it’s been a long time coming that we teamed up with award-winning Filipino chocolate maker 1919 Chocolate to create our first-ever chocolate: The Mocha Bar. 



The Mocha Bar is crafted with high-quality Filipino chocolate, using cacao from 1919 Chocolate’s century-old farm in Batangas. Their chocolate is made from the farm’s Criollo trees, a rare cacao variety that produces a unique and complex flavor profile compared to other varieties.

For a coffee kick, we used our best-selling Trooper coffee, a Brazilian blend that has notes of dark chocolate, roasted almonds, and cherries. It’s directly infused into the chocolate with a melanger, which grinds the roasted beans and ensures that the chocolate gets the most flavor out of our specialty coffee blend.

The chocolate bar has two distinct layers: coffee-infused 62% dark chocolate and white chocolate speckled with ground coffee, which resembles a deconstructed version of the classic drink.

“Our vision was to create a chocolate bar that is inspired by the mocha drink. We wanted to make a bar that had different elements to it, drawing inspiration from the actual components that made a mocha,” said Karl and Kay, founders of 1919 Chocolate. “So there's the dark chocolate infused with coffee and there's also the white chocolate, like the textured milk you pour on the espresso and chocolate mixture. Then to add some crunch, we folded in some ground coffee in the white chocolate. You can say this is like the garnish for the mocha, but instead of using shaved chocolate, we used ground coffee for the bar instead.” 

This special collaboration captures how chocolate and coffee naturally complement each other, partnering with 1919 Chocolate to create a decadent fusion of specialty coffee and premium Filipino chocolate. 

“It reminded me of everything we've been through and how our passion brought us to where Plain Sight is and where 1919 Chocolate is now, and ultimately to this collaborative moment,” said Karl.
