Cold Brew

WHAT YOU'LL NEED

  • Toddy Kit or Bucket and Cheese Cloth
  • Large container or bowl
  • Stirrer

HOW TO PREPARE YOUR COFFEE:

  • Grind size: Coarse
  • Coffee amount: 420 grams
  • Brewing water: 2L to 2.3L room temperature water

Cold brew is a brewing method that’s easy to love: it’s simple, can easily serve large batches, and perfect for those who prefer a sweeter and less bitter coffee. While this brewing method is simple, the devil is in the details. Cold brews are best suited for medium to dark roasts with nutty and chocolatey notes, but not so much for light roasts as its acidic and bright notes will be muted. We also recommend using coarse, freshly ground coffee to get the best flavor out of your cold brew.

In this brewing guide, we’ll be using a 1:5.5 ratio, which is a more concentrated brew that goes perfect with milk or other coffee recipes.

    Combine ground coffee and equal parts water (420mL) in a container. Stir until the coffee is saturated, forming a consistency similar to brownie batter. Let it rest for 10-20 minutes to fully saturate. Transfer to a cheesecloth and set up in a toddy or bucket.

    After resting, add 420mL of water, ensuring the coffee is covered with approximately 1-2cm of water. Let it rest for another 10-20 minutes to degas.

    Note: If the water level goes above 1-2 cm, it will be more difficult for the gasses in the center to release.

    After resting, add in the remaining water and cover the container. Let it steep for about 14-16 hours.

    If you are using a toddy, place the toddy on top of a pitcher then release the lock to let the coffee drip into the pitcher. If you are using a bucket, set up a fine mesh strainer lined with cheesecloth over a pitcher to strain out the coffee grounds. Let it rest for another 30 minutes before drinking to minimize the amounts of solids in the brew.
