Ilaya is a local Philippine blend designed to highlight the character and potential of coffees grown closer to home. It brings together two Philippine coffees with distinct roles, creating a profile that feels familiar, balanced, and intentionally crafted.
This blend combines Benguet Sitio Belis and Bukidnon Fine Robusta, both grown in the highlands of the Philippines. The Benguet coffee contributes brightness and structure, adding lift and clarity to the cup. The Bukidnon Fine Robusta provides body and depth, grounding the blend with sweetness and weight. Together, they form a cohesive expression of local coffee, built on balance rather than extremes.
In the cup, Ilaya offers warm, approachable flavors. Expect notes of orange layered with roasted nuts and cocoa. The body sits at a comfortable medium, with pronounced sweetness and a measured acidity that adds energy without sharpness. It’s a profile designed to be easy to drink while still clearly defined.
Ilaya’s role is to offer an everyday local option that performs reliably across brew methods. It works cleanly as an espresso and opens up aromatically as a pour-over or batch brew. We make sure that you'll get your coffees not more than 10 days from the roast date, ensuring the right amount of time for you to try it out without it being too fresh off the roast. We recommend brewing the coffee 7 days from roast and flavors will peak around 2-4 weeks from roast

Every bag is packed fresh before dispatch using coffee roasted no more than 10 days prior.
For the best brewing experience, we recommend resting the coffee until at least 7 days from the roast date. The coffee continues to develop, with flavors typically peaking between 2 and 4 weeks from the roast date.
